Here is the way to compose emails with the gear S, paired with samsung galaxy s3:
First I installed this rom:

Maybe composing is already fine, but I installed an update for the stock email app to version 4.4.2.0400. But can not find the URL to the file any more. Before making the update I did not check if composing is already working. Just check it out by your own.
